Healthy&Fresh Dinner Salad

Sometimes, you just want a big salad for dinner.

The problem: salads don’t fill one up and satisfy as a meal in itself most times

The solution: a huge, fresh salad creation full of fiber filling ingredients, and topped with a protein to keep that stomach satisfied!

I made this salad for my mom the other night, and she loved it! She was completely satisfied the whole night..of course, until I made her my healthy chocolate protein mug cake(recipe on site)!

If you’re wanting a lighter meal, this is a great option. If you’re wanting a more filling, satisfying meal, this is still great, just add a big serving of protein on top! Grilled chicken, salmon, or even steak would be yummy.

Dinner Salad
-Spring Lettuce Mix
-Arugula
-5 cherry tomatoes, chopped
-1/4 red pepper, diced
-1 mini cucumber (or about 1/4 cup chopped)
-about 10 baby carrots, chopped small
-1/2 avocado, sliced
-2T nutritional yeast
-1T chia seeds
-1T walnuts
-2T dried cherries or raisins
-2T feta cheese
-2T olive oil/coconut oil
-1T balsamic vinegar
-salt and pepper to taste
-optional: grilled chicken, salmon, or steak to top salad
Directions: cut up enough lettuce and arugula to fill plate. Cut up all veggies and place on salad mix. Sprinkle nutritional yeast, seeds, nuts, cheese, and dried fruit on top. Drizzle oil and vinegar over all. Top with protein if desired. Enjoy!

Sugar Detox Day 4!

I am truly surprised with how good I’ve been doing with no sugar. I thought I would be craving it like crazy with how much I used daily to sweeten things, but I haven’t! Of course, it is only day 4, so I guess we will see! I’m sure the cravings will come soon enough :) Today, once again the hardest part was not being able to have gum. It’s just such a habit! And of course, my unsweetened hot tea in the morning doesn’t taste near as good as my alternative coffee with molasses! I’ll keep updating every now and then with how it’s going from here, but won’t be pestering with an every day story of similar thoughts! If anything new happens, I will let you know! It’s still not too late to join by the way! Join in any way you can, even if you don’t limit completely. Just the awareness it gives you is amazing. I will be continuing this until June 10th, so join any time! My rule? Nothing with added sugar, no artificial sweeteners, sugar, stevia, honey, or agave. Basically, only fruit and vegetables with naturally occurring sugars are allowed! But change it to fit your needs :)

For dinner the other night, I wanted some carbs with my big dinner salad, so what did I do? I placed one of my spinach wraps over an empty aluminum can, and put it in the oven under broil until toasted. What came from it? A perfect bowl for a salad! So delicious to end my dinner with :)

You should most certainly try it! Anytime you need a more enjoyable way to serve a meal, look no farther, here it is!

Only instructions I can give is to drape any kind of wrap over an empty can or bowl, and toast in oven until “set” in a bowl shape :)

Curry Apple Chicken Salad

HAPPY MORTHER’S DAY to all you amazing mothers out there! And children, this would be a lovely lunch to prepare them:)

Have you ever had curry? If not you are missing out! Curry powder is an Indian spice that makes dishes delicious! Usually when I think of curry, I think of a creamy sauce filled with protein and veggies, that you spoon over rice. That’s the kind of stuff you can order at Thai restaurants or such! But this has that same yummy curry taste, but is a healthy dish!

This is a new take on your normal chicken salad. No mayo in this one. No creamy, fattening ingredients. Just healthy, great tasting food. This is a great thing to make for lunch. Serve it on a sandwich, on top of a salad, just eat with a spoon, or you can carve out the inside of an apple and serve in an apple bowl. Yep, that’s exactly what I did if you look at the picture below! It makes eating fun and keeps it healthy (not to mention, makes a great presentation) :)

This is a recipe my mom has made our family for a couple of years now, and it never gets old. I even bought my own bottle of curry powder to keep up at college so I could make it while gone! Its cheap, as you use canned chicken, high in protein and low in fat, as it uses chicken and Greek yogurt instead of mayo..and of course, it is delicious! Hope you can get some use out of this yummy one!

Curry Apple Chicken Salad
-1 can white chicken
-1/4 cup plain Greek yogurt
-1/2 big apple, diced small
-1/4 cup chopped celery
-1/4 cup walnuts, chopped
-1T curry powder
-to taste: sea salt, season salt, pepper
-optional: hallowed apple to serve it in (use spoon to scoop out insides after cutting off top with knife)
Directions: Combine yogurt,chicken, and seasonings together in bowl. Add in apple, celery, and nuts. Enjoy!
