Mochonut Pancakes filled with Coconilla Yogurt

It all started when I went to the local Christian coffee shop to study, and asked them to make me something yummy, something new for once from my usual latte. They made me this mocha coconut latte. Do I need say any more? Maybe that it was heaven in a cup?


Well last week, I was planning on entering a pancake competition via Instagram (Follow me @FreshFitnHealthy) :). Each week for three weeks this user was going to make a category of pancake to enter. Last week the theme was “protein pancakes”.

Naturally I accepted the challenge. I kept asking myself, what is something new, something really unique. And after having this latte, I knew what I should create.

Mocha Coconut latte flavored pancakes, Mochonut for short :) Unfortunately, I didn’t win the contest. But this week is a new week, and it’s berry pancake theme! Wish me good luck! But for now, here is the recipe for these still awesome(even though not first place), pancakes:)

Mochonut Pancakes

For Pancakes:
-1 scoop vanilla or chocolate protein powder
-1/4 cup coconut flour
-1/2 cup egg whites
-1/2 cup almond milk
-2 T cottage cheese
-2 T mocha cappuccino mix (or 1 tsp instant coffee)
-2 tsp cocoa powder
-1 tsp coconut and vanilla extracts
-1 tsp baking powder
-1 packet stevia
-touch of cinnamon and sea salt

*Directions: Mix all ingredients together, blend until smooth. Cook on stove in coconut oil.

For Coconilla Yogurt filling:
-1 cup Greek yogurt
-1 tsp coconut extract
-1/4 cup homemade coconut butter
-agave to taste

Directions: Mix all together until thoroughly mixed. Fill layers of pancakes with yogurt mixture.


Pumpkin Frozen Yogurt Bites

I know with seeing the word pumpkin again, those of you who are not the biggest fan may be tempted to click out of this before reading, but wait! If you don’t like pumpkin flavor, these are so so easy to make any other flavor as well :)

Frozen yogurt, in bite form?! I think yes. All the more reason to eat more of these healthy,protein-filled guys!

You may have seen these before across the internet, but of course I put my own little spin on them. I’ve made them in the flavors of chocolate and vanilla before, and now pumpkin! They are such a yummy and delicious snack..and of course, healthy! Yay for healthy things that actually taste good. No more of this yucky health food stuff. This site here is to show you that you can turn anything you love into a healthy food! (Well, in most situations!)

Have something that you really wish was healthy for you? Let me know and I’ll experiment with a recipe! I would love to create something that you all are really desiring to have! Any feedback would be awesome :)

But for now, here are my lovely pumpkin frozen yogurt bites!

Pumpkin Frozen Yogurt Bites
– 1 cup greek yogurt
-1/4 cup pumpkin
-1/4 cup sweetener of choice ( I used agave)
-1 T cinnamon
-1 tsp vanilla extract
**If you want another variety, say chocolate, sub in chocolate powder for the pumpkin and add some chocolate chips!  Or leave all that out and just make plain vanilla frozen yogurt  bites :)
*Directions: Mix all ingredients together to make you’re pumpkin yogurt. Spoon out little blobs on parchment paper, and freeze! Keep in freezer and pull out as desired :)

Banana Bread Pancakes

“Makin’ banana pancakes, pretend like it’s the weekend..” was the theme of this morning’s breakfast :)

I’ve been really into making pancakes lately. All different kinds. But this morning, since my boyfriend absolutely loves banana bread, I decided to create these. Fluffy, moist, and that oh so delicious taste of biting into a good piece of banana bread. Top it with my peanut butter yogurt sauce, and you’ve really got yourself something yummy.

People tend to think pancakes are a “bad food”, but you’ll come to learn with my oh so many recipes I’ve made, that you can make them really healthy! Like these, substitute some flour for oatmeal, egg for egg substitute, add in some fruit like bananas, and top it with protein filled Greek yogurt. Looks like you’ve got yourself an all-around healthy meal! I’ve also been experimenting with a lot of protein pancakes made with protein powder that are really high in protein and good post-workout snacks ..which I’ll post sometime soon :)  But even with these pancakes, making a whole big batch of them and saving some in the fridge makes such a good snack..or second meal! My brother came in today from Tampa and found my leftover bag of them from this morning. Let’s just say, I no longer have any more leftovers :) But anyways, enjoy these banana bread pancakes as you, “pretend like it’s the weekend”..or, make them now while it is the weekend!

Banana Bread Pancakes
-1 cup oat flour
-1/2 cup mashed banana (really ripe works best!)
-1 cup of milk
-2 eggs (or 1/2 cup egg substitute)
-2 T sugar
-2 T agave/honey (or more sugar)
-1 tsp vanilla extract
-1 T cinnamon
-2 tsp baking powder
-touch of salt

Directions: mix all ingredients together. Heat pan on stove at medium heat. Cook as normal pancakes! Top with desired toppings. I topped mine with a peanut butter Greek yogurt sauce (recipe below), and bananas.

Peanut Butter Greek Yogurt Sauce
-1/4 cup Greek yogurt
-2 T peanut butter
-2 T agave/honey
-Milk to thin as desired
*Mix all together and serve on top on pancakes!
