Honey Lime Chicken Kabobs

Remember that honey lime chicken I posted a little bit ago? Well, since it turned out good, I used it for my mom’s surprise party and made kabobs..many kabobs..7 lbs worth of chicken.

Kabobs are such a great thing to make. Especially if needing a meal in mass amounts! Perfect for a party.

I made the marinade the day before, and cut up the chicken to allow it to soak up all those delicious flavors for a long time. The day of the party, I cut up the peppers and onions to go on the kabobs with the chicken, and assembled the kabobs. When guest started arriving, I put those babies on the grill, and turned them half way through cooking to get the other side browned.

Everyone loved them! The chicken was so moist and everyone was raving about them.

Pumpkin Froyo-without icecream maker!

I have now actually invested into an ice cream maker, it’s so fun and yummy. But what did I do before I had one(and still use when too lazy to get out the huge machine)? I make a yummy cold treat this way!

You can easily mix together the ingredients and flavors you want in your froyo concoction. The possibilities are seriously endless. I’ll give you a few options, but you can add anything you would want as well! Of course, the picture here is of my pumpkin flavor. Surprise surprise :)

This is such a healthy alternative as unlike froyo you buy out, this is very high in protein! and you can dress it up to meet your sweetness and caloric needs. Keep it simple for weightloss/low calorie, or dress it up with delicious toppings and add ins to make it more decadent!

Does this taste exactly like the creamy froyo you get from your local shop or even from an ice cream maker? Not 100%. But does it satisfy my craving when desiring that yummy stuff? Most certainly. It is such a yummy snack for any time of the day :)

Pouring my mixture into a container to freeze!

 

Pumpkin Froyo
-1 cup almond milk (or other kind)
-1 cup greek yogurt
-1/2 cup pumpkin
-1 tsp vanilla extract
-2 packets stevia/agave to sweeten
-cinnamon to taste
-Toppings: sky is the limit! But many times I use nut butters, clean chocolate syrup, crumbled protein cakes I’ve made or cereal, granola, fruit, coconut, chocolate chips, anything!!
Directions: Mix everything together until smooth. Add in any other desired flavors/ingredients. Place in shallow container in freezer for about an hour. After 30 minutes, take out and stir to break up some of the iciness. Put back in freezer for about 30 minutes. Top with desired ingredients. Enjoy!

For Mint Variety: omit pumpkin and add 1/2 tsp mint extract plus 2T chocolate chips
For Chocolate Variety: omit pumpkin and add in 2T cocoa powder+choc. chips
For Mocha Variety: omit pumpkin, and add 1 instant coffee packet+choc. covered expresso beans or choc. chips
For Protein Variety: omit pumpkin and add 1 scoop of desired protein powder flavor

Honey-Lime Chicken

Guess what? I’m planning a surprise birthday party for my mom this weekend.

You may ask, why are you telling me this? Well, I decided as one of the entrees, to make chicken and veggie kabobs! So of course I had to experiment with marinades for it:)

I made this one and marinated chicken breasts in it for a couple hours and put them on the grill for dinner last night, and they turned out amazing! My mom was obsessed with it and said “the chicken is just so moist and good!”. I then knew what marinade I was going to use Saturday.

Now this may sound like a weird combination somewhat, but it tastes so delicious! All the flavors come together so perfectly. Next time you are looking for a healthy marinade, look no farther, this is a winner. A sweet, yet savory and rustic flavor at the same time. Couldn’t ask for anything better.

Honey-Lime Chicken Marinade
-1/4 cup soy sauce
-3 T honey/agave
-1/4 cup white vinegar
-juice from one lime
-2 tsp sriracha
Directions: Mix altogether and coat chicken breasts. Leave soaking in marinade in fridge for at least an hour. Cook chicken as desired!
