Chocolate Chip Cookie Pancake Sandwiches

Say what?! Chocolate chip cookies..in pancake form..and healthy?!

I love my healthy pancake recipes! It’s so great to be able to eat the foods I love, yet in a healthier light. And like always, just because their healthier, the taste doesn’t suffer one bit. Actually, I think these taste better than regular ole’ pancakes. I mean, come on, they are chocolate chip cookie flavor..

And you won’t believe this one. They are made with a vegetable! Now you’re really starting to wonder if I’ve gone crazy. Nope. These are real. Real healthy. Real ingredients. Real good.

You may have seen the idea before, but making them into pancakes, I bet is something new. Can you guess the secret ingredient?!

Chickpeas.

Yep. Don’t judge until you try it! I promise you that you will not taste the beans. It will taste like delicious chocolate chip cookie dough. I know you’ll love it!

Using chickpeas instead of flour is not only a great way to make something gluten free, but also lower in calories, higher in fiber, and higher in protein! Take that for a healthified pancake. These pancakes are sure to surprise you’re guests..in a good way!

Chocolate Chip Cookie Pancake Sandwiches
-1 can chick peas
-2T oat flour
-1/2 cup almond milk
-1/4 cup egg beaters
-2T nut butter (pb or any kind!)
-2 packets stevia
-1 tsp each: baking powder, vanilla extract or butter extract
-sprinkle of salt
-chocolate chips
Directions:Food process chick peas with almond milk until smooth. Add other ingredients except for chocolate chips. Add chocolate chips at very end and mix with fork or spoon. Cook pancakes as normal in pan on stove, flipping when cooked on one side. Make “sandwiches” if desired by making chocolate or pumpkin mousse (recipe below!)

Chocolate Mousse
-6 oz tofu
-1/4 cup cottage cheese
-2T cocoa powder
-2T agave or 1 packet stevia
-1 tsp each: cinnamon, vanilla extract, xanthan or guar gum
Directions: Blend altogether and allow to sit in fridge to thicken more or enjoy right away!

All Natural No Bake Cookie Dough Balls

Yes, that same chocolate chip cookie dough taste all in one healthy, natural ball. Success.

My mother’s birthday was a couple weeks ago, and like I mentioned in a past post, I had a surprise party for her big 55th. But like I haven’t mentioned yet, I promised her while I am home for the summer that I would make her all healthy meals and desserts to come home to every day after a long day of work.

Yes, we still bought her a cake since it was her birthday, but, I decided to make healthy alternative desserts too that she could indulge in if she didn’t want the real stuff:)

So I came up with these yummy balls that contain only all natural ingredients, are no bake, and so simple and healthy! And the best thing, you can take this recipe, and add in any other ingredient you’d want to have in a cookie to personalize it just for you! Mmm.

All Natural No Bake Cookie Dough Balls
-1 cup oats
-1/4 c pb2/natural pb or almond butter
3T agave
1T flaxseed+3Twater
Optional:chocolate chips
Directions: combine water and flaxseed and let sit for a minute or two. Then combine all other ingredients until thoroughly mixed together. Roll into balls. Enjoy right away or keep in fridge until consumed! :)

Pumpkin Froyo-without icecream maker!

I have now actually invested into an ice cream maker, it’s so fun and yummy. But what did I do before I had one(and still use when too lazy to get out the huge machine)? I make a yummy cold treat this way!

You can easily mix together the ingredients and flavors you want in your froyo concoction. The possibilities are seriously endless. I’ll give you a few options, but you can add anything you would want as well! Of course, the picture here is of my pumpkin flavor. Surprise surprise :)

This is such a healthy alternative as unlike froyo you buy out, this is very high in protein! and you can dress it up to meet your sweetness and caloric needs. Keep it simple for weightloss/low calorie, or dress it up with delicious toppings and add ins to make it more decadent!

Does this taste exactly like the creamy froyo you get from your local shop or even from an ice cream maker? Not 100%. But does it satisfy my craving when desiring that yummy stuff? Most certainly. It is such a yummy snack for any time of the day :)

Pouring my mixture into a container to freeze!

 

Pumpkin Froyo
-1 cup almond milk (or other kind)
-1 cup greek yogurt
-1/2 cup pumpkin
-1 tsp vanilla extract
-2 packets stevia/agave to sweeten
-cinnamon to taste
-Toppings: sky is the limit! But many times I use nut butters, clean chocolate syrup, crumbled protein cakes I’ve made or cereal, granola, fruit, coconut, chocolate chips, anything!!
Directions: Mix everything together until smooth. Add in any other desired flavors/ingredients. Place in shallow container in freezer for about an hour. After 30 minutes, take out and stir to break up some of the iciness. Put back in freezer for about 30 minutes. Top with desired ingredients. Enjoy!

For Mint Variety: omit pumpkin and add 1/2 tsp mint extract plus 2T chocolate chips
For Chocolate Variety: omit pumpkin and add in 2T cocoa powder+choc. chips
For Mocha Variety: omit pumpkin, and add 1 instant coffee packet+choc. covered expresso beans or choc. chips
For Protein Variety: omit pumpkin and add 1 scoop of desired protein powder flavor

Mint Chocolate Chip Cookie Cake

Okay, so I cheated with this one. Not necessarily a homemade recipe this time. But I’d like to think I made it my own by adding in certain things:)

Are you a big mint fan? York Patties. Mint Chocolate Chip Ice Cream. Shamrock Shakes. Well this is for you!

It was my boyfriend’s birthday and I was trying to think of what to make him. He loves Mint. He loves Chocolate Chip Cookies. So what did I come up with? Chocolate chip cookie cake!

But I was a little too lazy and short on time to make homemade dough. So I went the easy way out :)

This is made with store bought dough. Yet..special ingredients added it! So I guess I can still call it my own:)

Mint Chocolate Chip Cookie Cake
-1 pouch of sugar cookie mix
-ingredients on back of pouch for cookies
-1 bag of mint and dark chocolate chip
-1 tsp mint extract
-Optional: green food coloring
Directions: Preheat oven according to back of mix. Made sugar cookie dough as instructed on back of mix. Add in extract and chips. Add green food coloring in for a fun effect if desired. Cook according to back of mix for cookies, or make in a round pan for a cake!

Here’s another time I made this recipe but added green food coloring and made as cookies instead! So fun for the holidays especially:)

3 Ingredient Cookies

Wait what?! Only THREE ingredients?! And did I mention NO added sugar?! Cookies could never be that easy! Or healthy! Well, actually..they most certainly can! These are not only easy and so very healthy, but extremely delicious!

Sunday night at my bible study, one of the girls brought cookies over for us all. They looked so good, like all oatmeal cookies look, that I had to try one. But what my mouth tasted at that very moment was no ordinary oatmeal cookie. This cookie was soft, chewy, and packed with such a delicious banana flavor! I had to ask what the ingredients were. And that’s when she told me it was so simple and only three ingredients! Of course, I went home only to make them the next day.

But of course knowing me, I spiced it up a bit and added some extras to bring out the flavors. Try it as you will. For me, chocolate is always a must. But any choice you make, it’s delicious. And healthy. And easy. Did I mention absolutely delicious?!

These will certainly be a weekly creation and my new favorite dessert every night. And no, I am not sorry that I ate over five of them when first bringing them out of the oven. Or that I’ll probably eat some for breakfast.  I did say they were healthy..right?

3 Ingredient Cookies
-2 cups rolled oats
-2 very ripe bananas
-1/2 cup applesauce
-Optional (What I added): chocolate chips, vanilla extract, cinnamon (or anything else you desire! Nuts, coconut, cocoa powder, egg whites for protein,  ect.)

Directions: Mash bananas. Stir in oats and applesauce. Add in any extras you desire. For me, chocolate chips was NOT optional :) Bake at 350 degrees for about 8-10 minutes.

Chocolate Chip Cookie Dough Dip

Warning: This may not be the healthiest of the recipes (or even remotely healthy), but you will surely NOT regret making it.

       I rarely make full fat, full sugar, basically full everything recipes, because, well that’s what I love to do..Take recipes like those, and make a healthy alternative! (I have been experimenting with a healthy variation which I’ll post when perfected) But this was for a special occasion, one of my best friend’s birthday, and I decided to go for the real thing:) And you have to live a little sometimes anyways!

So for now, I leave you with something that is so creamy and filled with that delicious taste of freshly baked chocolate chip cookies: my chocolate chip cookie dip. ( inspired by Taste of Home’s recipe, but varied). Dip in some delicious graham crackers, pretzels, animal crackers..or even just dip that spoon of yours in! I promise I won’t judge (:

Chocolate Chip Cookie Dip
-1 8 oz package cream cheese
-1/2 cup butter
-1 cup powdered sugar
-1/4 oat flour (or any flour will do!)
-2 T molasses or 1/4 cup brown sugar
-1 tsp vanilla extract
-1 tsp butter extract
– 1 cup mini chocolate chips
-Dipper options: graham crackers, animal crackers, pretzels, apple slices, or just eat with a spoon!

Directions: Cream together butter and sugar in food processor. Add in all the other ingredients except chips and combine until evenly mixed. Stir in chocolate chips. Serve with your choice of side for dipping!
